I have been eyeing the spinach and cauliflower noodles from Woolworths and I thought to have them as part of a healthy lunch or dinner meal. Here is how I made it:
– Woolworths spinach and cauliflower noodles
– Olive oil
– Curry powder
– Turmeric powder
– Canned tomatoes
– Lamb frikkadels
Woolworths Spinach and Cauliflower Noodles –
Cut 2cm of the top corner of the bag of the spinach and cauliflower noodles, place on a microwavable plate and microwave for 1 minute or until cooked. You can also boil them in salted water.
Tomato Relish –
Add olive oil and onions into a pot and cook on low heat until tender. Add the curry powder and the turmeric powder and cook for a few more minutes. Add the canned tomatoes and salt and cook for about 20 to 30 minutes.
Lamb Frikkadels –
Heat up olive oil on low heat then add the lamb frikkadels once it has heated up and turn them occasionally until cooked. This will take about 20 minutes.
Place the cooked spinach and cauliflower noodles in a bowl or plate, add the tomato relish and the lamb frikkadels on top. Enjoy!
