Black Beans, Quinoa, Corn, and Beef Mince

Ingredients:

– Olive oil

– Onions

– Curry powder

– Canned tomatoes

– Pink salt

– Lean beef mince

– Canned black beans

– Quinoa

– Frozen sweet corn

 

method:

Add olive oil and onions into a pot and cook on low heat until tender. Add the curry powder and cook for a few more minutes. Add the lean beef mince and pink salt and brown it. Add the canned tomatoes and cook for about 20 to 30 minutes.

Steam the frozen sweet corn for about 10 minutes.

Place half a cup of quinoa and a cup of water into a pot and bring it to a boil. It will take about 20 minutes for the quinoa to absorb all the water and cook.

Drain the black beans and add them to a bowl along with the cooked lean beef mince, sweet corn and quinoa.
